Will graduate next year with a degree in mechanical engineering and I wanted to know if I can't find a job in my field, how could I transition into the IT field. Any input is appreciated.

U have to prove how job relates to masters while applying stem opt

Also it is hard to get H1b approved if you work in IT field with non-IT degree in this new era.
